The Sujihiki is particularly useful for filleting, trimming, and finely slicing fish or meat.
Thin and long blade allows the meat or fish to be cut in one single drawing motion.
The blade shape is similar to that of the Yanagiba, it useful for making Sushi and Sashimi.

This is the Stainless steel blade kitchen knife that has a good rust resistance for easy maintenance.
That said, please remember it is stain-less, not stain-never.

Notes.

◆Please do not use it to cut bones or frozen foods. These are the most common causes of chipping of the blade.
◆If you feel that the blade has become dull, we recommend using Japanese whetstones to re-sharpen.
◆After using, please hand wash the blade and handle thoroughly.
◆After washing, please wipe clean with a soft cloth to dry and store in a dry place.
◆Please do not the knife keep in wet conditions or leave in water for long periods.
◆Please do not put the knife in the dishwasher.
